  • 1 Tbsp baking powder
  • 1 Tbsp sugar
  • 1/2 tsp salt
  • Wet Ingredients

Wet Ingredients

  • 3 large eggs well beaten

  • 1 tsp vanilla (optional)

Instructions

  • Whisk together dry ingredients.

  • Add the wet ingredients to the dry and stir until just combined. Do not overwork the batter.
  • Grease and pre-heat the waffle iron.
  • Pour waffle batter into the center of the waffle iron, spreading it until it’s within about 1/2 to 1/4 inch of the edge.
  • Close the waffle iron and immediately flip.
  • Cook for about 4-6 minutes on an automated iron, or flip halfway if using a stove-top iron.
  • Remove waffles with a fork when fully cooked and golden brown on both sides.
  • Grease the waffle iron before adding more batter and repeat.

Notes

Part of the original version of this recipe called for “4 to 16 tablespoons” of butter. 4 if you want it low-fat, 8 is pretty standard nice fluffy waffles. 16 will make them crunchier and very delicious, but … I mean it’s half a pound of butter…
